Mango and coconut ice cream bars

This recipe is perfect for entertaining. The bars can be made ahead of time and left in the freezer to set until it’s time to enjoy time with your guests.

Serves: 6
Prep Time: 20 minutes
Freeze time: 3-4 hours or overnight

Ingredients

  • 1 cup coconut cream
  • 2 tablespoons honey
  • 1 teaspoon vanilla bean extract
  • ¼ cup roasted macadamias, roughly chopped
  • 2 cups frozen mango
  • 2 tablespoons shredded coconut, toasted

Method

  1. Whisk coconut cream, honey and vanilla in a large bowl. Fold through half the macadamias. Set aside.
  2. Line a small loaf tin or rectangle mold with baking paper or cling wrap, allowing it to overhang the sides. Blitz frozen mango in a small food processor until smooth. Pour into prepared loaf tin, then gently pour coconut mixture on top. Freeze until firm for 3-4 hours or overnight.
  3. Use overlapping cling wrap to remove dessert from loaf tin. Slice into four bars and transfer to serving plates. Garnish with toasted coconut and remaining macadamias. Serve immediately.

Nutrition Tip: Like many fruits, mango is packed full of fibre and vitamins, namely A and C. One cup of mango contains about 25% of the vitamin A you need each day, and 76% of your vitamin C!
