Korean beef with ginger noodles and cabbage salad

This quick-to-cook beef and noodle dish is paired perfectly with a vibrant winter slaw.

Serves: 4

Cook Time: 20 minutes

Ingredients

  • 180g soba noodles
  • 2 tablespoons reduced-salt soy sauce
  • 1 tablespoon honey
  • 2 teaspoons sesame oil
  • 5cm piece ginger, finely grated
  • 2 garlic cloves, finely grated
  • 1 tablespoon olive oil
  • 2x 180g beef steaks (eg. porterhouse or scotch)
  • ¼ red cabbage, shredded
  • 2 carrots, coarsely grated
  • 4 spring onions, thinly sliced
  • 1 red chilli, thinly sliced
  • ½ bunch of coriander, leaves picked
  • juice of 1 lime
  • 1 tablespoon sesame seeds, toasted

Method

  1. Bring a large saucepan of water to the boil. Boil soba noodles for 2-3 minutes or until tender. Drain well.
  2. Combine soy sauce, honey, sesame oil, ginger and garlic in a small bowl. Pour half the dressing over the warm noodles.
  3. Heat olive oil in a large frying pan over high heat. Cook steaks for 2-3 minutes each side or until golden brown and cooked to your liking. Remove steaks from the pan and set aside to rest before slicing.
  4. Meanwhile, toss red cabbage, carrot, spring onion, chilli, coriander and lime juice together in a large bowl.
  5. Divide noodles between serving bowls. Top with cabbage salad and sliced beef. Drizzle remaining dressing over steak and garnish with sesame seeds.

Cooking Tip: Let the frying pan do the hard work for you when cooking the steaks! Start off with a hot pan and hold off turning them until they have a delicious-looking golden-brown seal.

Nutrition Tip: High amounts of red meat have been linked to increased risk of bowel cancer. If you’re concerned you’ve been eating too much red meat, keep your portion sizes small, balance it out with half a plate of veggies and don’t be afraid to try this recipe with pork, chicken or tofu.
