Chorizo tacos with chipotle yoghurt

Leftover chorizo and chipotle? Try this delicious taco recipe from our friends at Sprout.

Serves: 4
Prep Time: 10 minutes
Cook Time: 5 minutes

Ingredients

  • 1 tablespoon olive oil, plus 2 teaspoons extra
  • 1 chorizo, diced
  • 1 red capsicum, diced
  • 2 corn cobs, kernels removed
  • 8 corn tortillas
  • ¼ cup reduced-fat Greek yoghurt
  • 1 tablespoon chipotle sauce
  • 1 cup rocket
  • 2 teaspoons red wine vinegar

Method

  1. Heat a frying pan over high heat with one tablespoon of oil. Add chorizo, capsicum and corn. Cook for 2-3 minutes or until golden brown and tender.
  2. Meanwhile, combine yoghurt with chipotle sauce in a small bowl. In a separate bowl, toss rocket with red wine vinegar and remaining oil.
  3. To assemble tacos, spoon chipotle yoghurt on the tortillas. Top with chorizo mixture and rocket, then serve.

Cooking Tip: Chipotle sauce has a rich, smoky flavour. It can be used as a topping on Mexican dishes, or added to slow cooked meats for incredible depth of flavour.

Nutrition Tip: Greek yoghurt is a great substitute alternative to mayonnaise. It offers the same creamy texture, but contains less fat and more protein to help keep feel full and satisfied.
